I needed a quick side dish to make with dinner using veggies I had on hand. This was quick, easy and tastes great!


  • 2 carrots
  • 2 medium zucchini
  • 1 Tablespoon extra virgin olive oil
  • 2 cloves minced garlic
  • Kosher salt & pepper


  • Using a potato peeler, peel lengthwise the carrots and zucchinis into ribbons, then cut the ribbons in half (they fit better in most pans this way). Heat oil in pan, add carrots and garlic, and cook for 3-4 minutes, stirring often. Add zucchini, still stirring often, and cook until soft. Add salt and pepper to taste.
