INGREDIENTS
- 3 eggs
- 1 c oil
- 2 c sugar
- Add:
- 2 c grated peeled zucchini
- (about 2 good sized zucchini)
- 3 tsp vanilla
- 3 c flour
- 1 tsp salt
- 1/4 tsp baking soda
- 2 tsp baking powder
- 3 tsp cinnamon
- 1/2 c chopped nuts
DIRECTIONS
In a large bowl mix all the ingredients together well.
Spray 2 bread tins, pour mixture evenly into each tin. Bake 1 hour at 30 degrees.
