Why I Love This Recipe

Ingredients You'll Need

2 cups shredded zucchini
3 eggs, beaten
2 cup sugar
1 cup olive oil
1 tsp. vanilla
8 oz. cream cheese, softened
2 cups flour
1 tsp baking soda
1 tsp baking powder
3/4 tsp cinnamon
1 tsp. salt
1/4 tsp nutmeg


Heat oven to 350. Grease and flour two 9 x 5 loaf pans.

In large bowl beat cream cheese. Add eggs, sugar, oil and vanilla, beat until smooth.

In a large bowl, sift flour, baking soda, baking powder, cinnamon,salt and nutmeg. On low speed, gradually beat into the egg mixture. Fold in zucchini. Evenly divide batter between the two pans.

Bake at 350 for 60 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and cool for 10 minutes. Turn out of pans and allow to cool completely on wire rack.
