Zucchini Bread

Ingredients

2 cup grated zuchini
2 cup sugar
1 cup vegetable oil
3 eggs
2 tsp vanilla
3 cup flour
2 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1 cup chopped nuts
1/2 tsp grated lemon rind
1 cup raisins


Drain liquid from zucchini and combine with sugar, oil, eggs and vanilla in a large bowl. Mix dry ingredients together (flour, baking soda, baking powder, salt and cinammon).


Slowly add flour mixture to zucchini. Mix well.


Stir in nuts, lemon rind and raisins.


Pour into 3 greased loaf pans. Bake at 350 for 60-70 minutes. Cool at least 10 minutes before removing to wire racks.
