ZUCCHINI BREAD

 

  • Cooking Time: 60 minutes
  • Servings: 12-15
  • Preparation Time: 25 minutes

Ingredients

  • 3 eggs
  • 2 c. white sugar (or 1 c. white, 1 c. brown)
  • 1 c. peeled, seeded and grated zucchini
  • 1. c. cooking oil
  • 2 t. vanilla
  • 3 c. flour
  • 3 t. cinnamon
  • 1 t. salt
  • 1 t. soda
  • 1 t. baking powder
  • 1/2 t. cloves
  • 1/2 t. ginger
  • 1 c. raisins (optional)
  • 1/3 c. crushed pineapple or more
  • 1 c. chopped nuts or less

Directions

  • Cream eggs, oil and sugar. Sift together dry ingredients and add to creamed mixture. Add zuchhini, raisins, nuts, pineapple and vanilla. Pour into 2 greased loaf pans and bake about 2 hour at 325 - 350 F. Some do not peel zuchhini, but Adele does.
