This is my relative, Adele's recipe. I have the handwritten recipe card she made for me.
Ingredients You'll Need
3 eggs
2 c. white sugar (or 1 c. white, 1 c. brown)
1 c. peeled, seeded and grated zucchini
1. c. cooking oil
2 t. vanilla
3 c. flour
3 t. cinnamon
1 t. salt
1 t. soda
1 t. baking powder
1/2 t. cloves
1/2 t. ginger
1 c. raisins (optional)
1/3 c. crushed pineapple or more
1 c. chopped nuts or less
Directions
Cream eggs, oil and sugar. Sift together dry ingredients and add to creamed mixture. Add zuchhini, raisins, nuts, pineapple and vanilla. Pour into 2 greased loaf pans and bake about 2 hour at 325 - 350 F. Some do not peel zuchhini, but Adele does.
