Zucchini Bread

3 eggs
1 cup of oil
2 cups sugar
1 Tbsp vanilla
3 cups flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 Tbsp cinnamon
2 cups grated zucchini
1 1/2 cups chopped nuts

Makes 2 loaves or 3 dozen muffins or 6 dozen mini-muffins

Preheat oven to 350 degrees.

Grease 2 loaf pans or muffin or mini muffin tins.

In a large bowl, cream together eggs, oil, sugar and vanilla.

In a separate bowl, sift together flour, salt, baking powder, baking soda and cinnamon. Stir to evenly combine well.

Add flour mixture to egg mixture and beat well.

Add in grated zucchini and mix well.

Add chopped nuts and mix well again.

Pour into prepared pans.

Bake until toothpick tester inserted in center comes out clean and edges start to turn golden. For loaves, about 45-50 minutes. For muffins, about 20-25 minutes.
