ZUCCHINI CHEESE BAKE

Ingredients

  • 3 tbls butter
  • 1/2 cup chopped scallions
  • 1 cup long grain rice
  • 1/2 tsp salt, divided
  • 1lb zucchini
  • 1 1/4 cup milk
  • 3/4 cup beef boullion
  • 1/2 tsp garlic salt
  • 1/8 tsp pepper
  • 1 1/4 cup shredded cheddar cheese
  • Chopped parsley

Directions

  • Melt butter in medium skillet
  • Sauté scallions and rice until onionis soft and rice is browned, about 8 minutes
  • Spoon into shallow greased baking dish with cover
  • Sprinkle 1/4 tsp salt over mixture
  • Wash and slice zucchini into 1/4 inch slices, crosswise
  • In bowl combine milk, boullion, garlic salt, pepper and 1 cup cheese
  • Arrange zucchini over rice and sprinkle with 1/4 tsp salt
  • Pour cheese mixture over zucchini
  • Cover tightly and bake in 350 oven 30 to 35 minutes
  • Remove cover, sprinkle with remaining cheese
  • Continue baking about 5 minutes more or until cheese melts
  • Garnish with parsley and serve
