ZUCCHINI CHOCOLATE CAKE

Ingredients

  • 1/2 cup margarine
  • 1 3/4 cups sugar
  • 1/2 cup sour cream
  • 2 1/2 cups flour sifted
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 cups grated zucchini
  • 1 6oz pkg chocolate chips
  • 1/2 cup oil
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Optional:
  • Cream cheese frosting
  • Powdered sugar for dusting

Directions

  • Blend oil and zucchini with mixer, set aside
  • In a large bowl cream margarine and sugar
  • Add eggs, mix well
  • Add zucchini and vanilla
  • Add sour cream alternately with rest of ingredients
  • Pour into greased 9x13 pan
  • Sprinkle on chocolate chips
  • Bake at 325 for 40 minutes
  • Serve plain, dusted with powdered sugar or frosted with cream cheese frosting.
  • (very rich cake, frosting or topping not really needed)
