3 cups grated, unpeeled zucchini
4 Tbsp onion, grated or finely chopped
1/2 cup parmesan cheese, grated
1/2 cup flour
4 Tbsp mayonnaise
1/2 tsp oregano
3/4 tsp salt
pepper to taste
Butter for frying
Wrap the grated zucchini in a clean kitchen towel. Twist the towel tightly around the zucchini, squeezing out as much liquid as you can.
Mix all ingredients (except butter) together in a medium bowl.
Melt about 2 Tbsp butter in frying pan or on a griddle.
Spoon batter into pan, forming pancake size. Flatten with a spatula.
Cook over medium heat until browned on both sides.
Serve plain or with tomato sauce and grated cheese or sour cream and chives.
