7 cup peeled, chopped zucchini
1/2 cup water
1 cup sugar
2 TB cornstarch
1 1/2 tsp cinnamon
1/4 tsp salt
1/4 cup lemon juice
Pastry for a 2 crust 9" pie.
1/4 - 1/2 tsp. granulated sugar
Place zucchini & water in large saucepan.
If using frozen zucchini do not add water.
Bring to a boil.
Cook uncovered, stirring often, about 10 min. until tender & most of the water is gone.
Volume will reduce about half.
Mix first amount of sugar, cornstarch, cinnamon & salt in bowl.
Stir into zucchini along with lemon juice.
Cook & stir until thick.
Remove from heat.
Set pan in cold water to cool for 10 min.
Roll pastry & line pie plate.
Pour filling into pie shell.
Roll pastry for top crust.
Cut vents in top.
Sprinkle with remaining sugar.
Bake on bottom shelf in 375ºF oven about 55 min. until browned.

This is much better than the mock apple pie made with crackers!
