ZUCCHINI PINEAPPLE BREAD

Zucchini Pineapple Bread

 


INGREDIENTS

  • Cooking Time: 60
  • 3 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • 1 cup crushed pineapple
  • 1 cup shredded coconut
  • 2 cups ground zucchini
  • 1 teaspoon cinnamon
  • 1 cup oil
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cups nuts (optional)

DIRECTIONS

Preheat oven to 350.


Combine the eggs, sugar, vanilla and oil, beat well.


Stir in zucchini.


In a separate bowl mix the dry ingredients then slowly fold in the zucchini mixture.


Stir in pineapple, coconut and nuts.


Pour into 2 well greased loaf pans.


Bake for approx. 1 hour or until toothpick comes out clean.
