ZUCCHINI PINEAPPLE BREAD

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • 1 cup crushed pineapple
  • 1 cup shredded coconut
  • 2 cups ground zucchini
  • 1 teaspoon cinnamon
  • 1 cup oil
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cups nuts (optional)

Directions

  • Preheat oven to 350.
  • Combine the eggs, sugar, vanilla and oil, beat well.
  • Stir in zucchini.
  • In a separate bowl mix the dry ingredients then slowly fold in the zucchini mixture.
  • Stir in pineapple, coconut and nuts.
  • Pour into 2 well greased loaf pans.
  • Bake for approx. 1 hour or until toothpick comes out clean.
