- 1/2 lb mild Italian sausage
- 4 cups sliced zucchini
- 1 cup finely chopped onion
- 1 green pepper chopped
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tsp oregano
- 2 tsp basil
- 2 tsp parsley
- 1 clove garlic mashed
- 1 can (28oz) tomatoes
- 1 tbls cornstarch
- 1/2 cup grated Parmesan cheese
DIRECTIONS
Brown sausage in heavy skillet, breaking into small pieces
Add zucchini, onion, green pepper, salt, herbs and garlic
Stir mixture until well coated with sausage fat
Drain tomatoes, reserving liquid
Blend 1/2 cup liquid with cornstarch and stir into mixture
Add remaining liquid, cook stirring constantly until slightly thickened
Place tomatoes on top, cook covered about 10 minutes, or until tomatoes are hot and zucchini is cooked crisp tender
Sprinkle cheese over top and serve
