ZUCCHINI SKILLET

Ingredients

  • 1/2 lb mild Italian sausage
  • 4 cups sliced zucchini
  • 1 cup finely chopped onion
  • 1 green pepper chopped
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp oregano
  • 2 tsp basil
  • 2 tsp parsley
  • 1 clove garlic mashed
  • 1 can (28oz) tomatoes
  • 1 tbls cornstarch
  • 1/2 cup grated Parmesan cheese

Directions

  • Brown sausage in heavy skillet, breaking into small pieces
  • Add zucchini, onion, green pepper, salt, herbs and garlic
  • Stir mixture until well coated with sausage fat
  • Drain tomatoes, reserving liquid
  • Blend 1/2 cup liquid with cornstarch and stir into mixture
  • Add remaining liquid, cook stirring constantly until slightly thickened
  • Place tomatoes on top, cook covered about 10 minutes, or until tomatoes are hot and zucchini is cooked crisp tender
  • Sprinkle cheese over top and serve
