ZUCCHINI BISQUICK BAKE
Zucchini bisquick bake
Got this from my mother in law. Very addicting. Great for lunch or as a snack for guests.
INGREDIENTS
- Cooking Time: 1 hour
- 3 eggs, beaten
- 1/2 cup oil
- pinch of salt & pepper
- dash of oregano
- 1 cup bisquick
- small package of mozzarella, grated
- aprox 1/4 cup grated cheese
- 1 medium onion, coarsely chopped
- 2 medium size zucchini, sliced thin
DIRECTIONS
Mix eggs, oil, salt , pepper, grated cheese & oregano. Add onion, zucchini & mozzarella. Mix. Pour in bisquick & mix until blended. Butter a small baking pan {aprox 9x13}. Pour mixture in & & bake at 350 for aprox 45-1 hour. Ready when top is golden brown & toothpick comes out clean.
