BackstoryI never get that excited about zucchini. So when I buy it, ends up sitting the fridge for way too long. This was the case last night. I opened up the veggie drawer, and the only thing in it was zucchini. So I tried to do something exciting with it. I think it worked because my husband kept eatiing it directly out of the pan. By the way, he made the dip for me while I fried the zucchini.
- bread crumbs
- olive oil
- Slice zucchini into 1/4" circles.
- Beat the egg with a dash of milk.
- Coat the zucchini with the egg wash and then the bread crumbs. Pan fry turning once until golden brown.
