BAKED CHICKEN WITH PECAN STUFFING

Ingredients

  • 1small onion chopped
  • 2 ribs celery
  • 1 apple cored and diced
  • 3 tabls. butter
  • 1t.salt
  • 1/8 plus 1/2 t dry sage
  • 1/2t pepper
  • 3/4 cup chicken broth
  • 3/4pound stale italian bread cubbed
  • 1egg beaten
  • 2/3cup chopped pecans
  • 1/2cup rasians
  • 4 chicken breasts
  • 1/4cup apple jelly
  • 1/8t ground cinnamon

Directions

  • cook onion,celery,apple in butter i skillet 5 min. add 1/2t each salt,sage,pepper. mix in bowl with bread. drizzle with chicken broth, egg stir in half cup nuts and raisins. Spread in 9by 13 inch pan. top with chicken and sprinkle with remaining salt.
  • Bake 400d oven 30 min. Melt jelly, remaining sage, cinnamon in saucepan brush over chicken. top with remaining nuts. bake 15 more minutes.
