  • 1 lb. Ziti pasta
  • 1 lb. ground meat (your choice)
  • chopped onion (eye it)
  • chopped bell pepper (eye it)
  • 12 oz ricotta cheese
  • 2 eggs - Beaten
  • 3/4 cup Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp parsley
  • 1 jar spaghetti sauce
  • 8 oz (2 cups) mozzarella cheese


  • Preheat oven to 350. Cook pasta according to package direction. Drain and rinse under cold water, drain again. Brown meat with onion and bell peppers, drain and add sauce. In a medium bowl, combine ricotta, eggs, 1/2 cup of the Parmesan cheese, salt, pepper, and parsley. Mix to blend well. Toss Ziti with 2 cups of sauce mixture. Place half the pasta in a baking dish (13x9 is too big, and a 9.5 x 11 is too small. I ended up using like a round 3 qt. casserole dish) Top with ricotta mixture and half the mozzarella. Then put in the rest of the pasta, sauce mixture, mozzarella, and Parmesan. Bake 30-35 minutes.
