balsamic chicken

Ingredients

1 pound chicken breast
1/2 cup wondra
salt and pepper
2.5 tablespoons oil
3 boxes of mushrooms, sliced
1 bay leaf
3 cloves garlic, smashed
1 teaspoon thyme
1 cup chicken broth
1/3 cup balsamic vinegar
1 tablespoon margarine


dredge chicken breasts in wondra, salt and pepper


saute in oil for four minutes on each side


remove chicken breasts and set aside


add mushrooms, bay leaf, garlic, and thyme to pan


cook on medium high heat for ten minutes, stirring occasionally


reduce heat to medium


add chicken broth and balsamic vinegar and cook for five minutes


add margarine, gently stir into mushroom mixture


add chicken pieces and toss them into mushroom sauce


continue to cook for five more minutes
