BALSAMIC CHICKEN

Ingredients

  • 1 pound chicken breast
  • 1/2 cup wondra
  • salt and pepper
  • 2.5 tablespoons oil
  • 3 boxes of mushrooms, sliced
  • 1 bay leaf
  • 3 cloves garlic, smashed
  • 1 teaspoon thyme
  • 1 cup chicken broth
  • 1/3 cup balsamic vinegar
  • 1 tablespoon margarine

Directions

  • dredge chicken breasts in wondra, salt and pepper
  • saute in oil for four minutes on each side
  • remove chicken breasts and set aside
  • add mushrooms, bay leaf, garlic, and thyme to pan
  • cook on medium high heat for ten minutes, stirring occasionally
  • reduce heat to medium
  • add chicken broth and balsamic vinegar and cook for five minutes
  • add margarine, gently stir into mushroom mixture
  • add chicken pieces and toss them into mushroom sauce
  • continue to cook for five more minutes
