500g (1lb 2oz) cherries, washed
125g (4 1/2oz) sugar
2 1/4 cups brandy, approximately
Pick cherries with fork and layer with sugar in a sterilised jar. Pour brandy over cherry mixture, leaving a little space at top of jar. Shake jar well, and shake each day for 7 days. store in a cool place for 6 months.
After this time, strain through a double thickness of muslin. Transfer cherry liqueur to a sterilised bottle and brandied cherries to a sterilised jar (with a little liqueur to moisten
