brother's favorite Roselle flower chutney
Half kg of gongura(Roselle) flowers and seasoning stuff(2 spoons of oil, half spoon mustard seeds, half spoon jeera seeds, 8 red chillis, 8 garlic cloves(optional) salt to taste, sugar or jaggery 2 spoons.
Wash gongura flowers thoroughly, Separate green seeds from red petals. We just use red petals and through green seeds.Take a pan, add oil, season it with mustard seeds, Jeera seeds, 8 cloves of garlic (u can skip if you don't like),8 red chillis. Grind this stuff after cooling. In the same pan add these petals and sauté it with no oil or half spoon of oil. Petals are very tender and in couple of minutes it turns to paste. Add crushed seasoning stuff to this paste. Add salt to taste and also add two spoons of sugar/Jaggery. This chutney tastes sour, spicy and sweet.

Gongura flowers available once a year around Christmas period. You can find them in farmers market and Indian stores. They are easy to find at Mexican markets.
