carrot and zucchini bread

Serves | Prep Time | Cook Time


1 1/2 C flour( all purpose)
3/4 C lt brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
4 eggs,beaten slightly or 4 egg whites
1/2 cup canola oil
1/2 C grated carrot
1 3/4 C grated zucchini
1/2 C golden raisins

preheat oven to 365 degrees

grease and flour an 8"x3" loaf pan.set aside.

In a medium bowl,combine the eggs and oil. mix well.

sift dry ingredients into large bowl.gently stir the egg mixture into the dry ingredients.Fold the veggies(carrots and zucchini ) and raisins into the above mixture. Pour into loaf pan and bake for 55 min or til cake tester comes clean.( temps vary with ovens)remove from oven,cool 5 min,remove from pan to a cooling completely before slicing

I've never seen carrot and zucchini mixed before.. a must try.

a great summer bread! I made it last night and it was really moist and tasty.
