cheese tomato fish fillets
1 Tbsp. olive oil
1/2 lb. fish fillets
1/4 tsp. salt
2 Tbsp. minced onion
1 cup of tomato, seeded and chopped
1/2 cup shredded Colby cheese
2 Tbsp. grated Parmesan cheese
Place olive oil in microwave safe 8" glass baking dish and place fish fillets in dish.
Sprinkle with remaining ingredients except cheeses and cover dish with microwave safe plastic wrap.
Microwave until fish flakes easily with fork, 2-1/2 to 3 minutes, turning dish once during cooking.
Sprinkle with cheeses, recover,
let stand 5 min before serving.
