cherry Gelatin Dessert
1 can (13-1/2 oz.) pineapple chunks
2 packages (3 oz. each) cherry flavored gelatin mix
2 cans cherry pie filling
1/2 cup miniature marshmallows
Drain pineapple chunks reserving juice. In a saucepan combine the reserved pineapple juice with water to make 1 cup of liquid. Bring to a boil then remove from heat. Mix in the gelatin mix and stir until dissolved. Chill until slightly thickened then beat until fluffy. Fold in the cherry pie filling, marshmallows and pineapple chunks. Spoon into a 2-1/2 quart mold. Chill until firm, unmold and garnish with whipped cream.
