CHICKEN STEW--MEXICAN STYLE
chicken stew--mexican style
I've had this recipe so long, I don't know where I got it.
INGREDIENTS
- 1 onion, chopped
- 2 tsp olive oil
- 2 c shredded chicken that has been boiled with 1/4 onion, garlic powder, salt, pepper, and fajita seasoning
- 1 can pinto beans, drained
- 1 can stewed tomatoes
- 1 can chicken broth
- 1 1/2 c frozen corn
- 1 can green chiles, chopped
- 2 tsp chili powder
- 1/2 c fresh cilantro
DIRECTIONS
Saute onion in oil. Stir in chicken and next 6 ingredients. Bring to a boil and reducse heat. Cover and simmer 10 minutes. Stir in cilantro. Serve with tortilla chips or cornbread.
