CHICKEN STEW--MEXICAN STYLE

Ingredients

  • 1 onion, chopped
  • 2 tsp olive oil
  • 2 c shredded chicken that has been boiled with 1/4 onion, garlic powder, salt, pepper, and fajita seasoning
  • 1 can pinto beans, drained
  • 1 can stewed tomatoes
  • 1 can chicken broth
  • 1 1/2 c frozen corn
  • 1 can green chiles, chopped
  • 2 tsp chili powder
  • 1/2 c fresh cilantro

Directions

  • Saute onion in oil. Stir in chicken and next 6 ingredients. Bring to a boil and reducse heat. Cover and simmer 10 minutes. Stir in cilantro. Serve with tortilla chips or cornbread.
