cider salmon steaks
4 salmon steaks, 1 inch thick
2 tablespoons soft butter
4 sprigs fresh tarragon, dill or thyme
1 lemon, thinly sliced
1/2 cup apple cider
Preheat oven to 325. Butter a shallow casserole dish with a tight fitting lid.
2. Place salmon steaks in casserole dish and spread with butter. Season to taste with salt and pepper. Place a sprig of herb on top of each steak and cover with two slices of lemon.
3. Heat the cider and pour into the bottom of the casserole dish; cover tightly. Bake about 25-30 minutes until the salmon steaks flake. serve with pan juices.
