For a while I got on a kick of trying to incorporate Kona coffee into savory dishes - this was my attempt at a coffee marinade


  • 1 qt regular brewed Kona coffee
  • 1/2 c bottled water
  • 1T cumin seeds, toasted
  • 4T roasted garlic
  • 3 bay leaves
  • 2T worcestershire sauce
  • 1 t crushed red pepper
  • 1/4 c canola oil
  • 1 small red onion sliced


  • Bring coffee to a boil
  • In a saucepan, heat oil, add onion, garlic, bay leaves, and cumin.
  • Saute until onion is softened
  • Add worcestershire sauce and red pepper
  • Add water and reduce by half
  • Add coffee to mixture, stir well to incorporate, and simmer for about 15 minutes.
  • Cool and strain, using as needed
