creamy dark chocolate cupcakes
1 1/2 c. flour
1 t. baking soda
1 t. salt
1/3 c. cocoa powder
1 c. sugar
1/2 c. oil
1 c. water
1 t. vanilla extract
1 T. vinegar
Preheat oven to 350 degrees.
Combine oil, sugar, vanilla & vinegar in a large bowl- stir.
In a seperate bowl, combine remaining dry ingredients (flour, baking soda, salt, cocoa powder).
Combine wet & dry ingredients, then add water.
(Add 1/2 cup water, mix, then add the rest of the water)
Mix until lumps fade.
Pour into cupcake cups & bake for 18-20 minutes.
For a cake layer, bake in cake tin for 28-30 minutes.
I serve these cupcakes with a simple cream cheese frosting.
Just beat the ingredients below together:
3/4 stick butter
1 block cream cheese
powdered sugar (as much or little as you like)
