dungeness crab avocado sandwich

Ingredients

1 cup dungeness crab meat, cleaned and picked yourself (don't skimp here!)
1 ripe avocado, diced
1/4 c mayo
1 t Mendocino mustard (or any spicy sweet mustard)
1/2 t kosher salt or to taste
1/2 t freshly ground grains of paradise
2 leaves romaine lettuce
1 soft sweet roll


Mix mayo, mustard, salt and pepper


Fold in avocado and crab, to keep large chunks of avocado and crab visible


Cut sweet roll in half, and scoop out part of the bread to make room for filling.


Lay lettuce leaves on bottom half of roll


Scoop crab avocado mixture into top half of hollowed out bread, then lay bottom half of bread over sandwich.


Carefully holding together, cut diagonally and enjoy!

Notes

Dungeness crab and avocado is in my opinion, one of the best combinations out there. The sweetness of the crab and the creaminess of the avocado is just divine.
