- Servings: 1.25 litres
- 6 tablespoons finely grated fresh green ginger
- 6 cups water
- 4 1/2 cup sugar
- 4 teaspoon citric acid
- 3/4 cups lemon juice
Combine ginger and water in a large saucepan and bring to the boil. Boil gently for 10 minutes, then strain out ginger. Add sugar, citric acid and lemon juice, bring to boil and summer for 5 minutes.
Pour into sterilised bottles and seal. The cordial can be consumed immediately. Once opened store in the fridge.
