6 tablespoons finely grated fresh green ginger
6 cups water
4 1/2 cup sugar
4 teaspoon citric acid
3/4 cups lemon juice
combine ginger and water in a large saucepan and bring to the boil. boil gently for 10 minutes, then strain out ginger. add sugar, citric acid and lemon juice, bring to boil and summer for 5 minutes.
pour into sterilised bottles and seal. the cordial can be consumed immediately. once opened store in the fridge.
