Why I Love This Recipe

Healthy alternative to regular granola bars


Ingredients You'll Need

2 1/2 cups Large flake oats
2 cups crisp rice (I use brown ones)
1 cup Unsweetened Coconut
1 Cup Nuts (Sliced almonds, Chopped Hazelnuts, Pecans, walnuts and or Peanuts)
1 cup Dried fruit (raisins, cranberries chopped apricots or whatever)
1 cup seeds(sesame seeds, sunflower seeds, pumpkin seeds, flax or whatever)
1/2 cup coconut oil
1/2 honey
1 cup Brown sugar (can sub for alternative sugar)
Lots of Chocolate chips (stevia ones) to melt and drizzle afterwards


Directions

combine oats, crisp rice, coconut, nuts, dried fruits and seed: set aside


place butter, honey and brown sugar in a large pot. Over med. heat stir to combine ingredients as butter melts. when mixture begins to bubble add dry ingredients and stir well.


cook approx. 7 minutes until mixture is light golden brown stirring constantly to avoid over-browning. lower heat if mixture is darkening too quickly.


press into lightly greased 9” by 13” pan (i use a cookie sheet)


press down firmly. cool completely. cut into bars and wrap individually.
