HONEY MUSTARD CHICKEN TENDERS
honey mustard chicken tenders

- 1/3 cup diced almonds
- 2/3 cup dried multigrain breadcrumbs
- 12 chicken tenderloins
- 2 tablespoon olive oil
- mixed salad leaves, to serve
- Honey mustard dressing
- 1 tablespoon Dijon mustard
- 2 tablespoons honey
- 1 tablespoon white wine vinegar
DIRECTIONS
combine almonds and breadcrumbs in a bowl. coat 1 tenderloins in breadcrumbs mixture. transfer to a plate. repeat with remaining tenderloins
heat oil in a large frying pan over medium - high heat. cook tenderloins for 3 - 4 minutes each side or until golden and cooked through
meanwhile, make honey mustard dressing: place mustard, honey and vinegar in a screw - top jar. seal. shake to combine. divide chicken and salad leaves between plates. top with dressing. serve
