lemon Tuna Pasta
Why I Love This Recipe
On our trip to Italy we ate lunch at several different Villas. The food was always outstanding and delicious.
At one of the villas, they prepared this tuna dish that was wonderful. I talked to the owner and he shared the recipe.
It has been a big hit with family and friends and is so easy to prepare.
Ingredients You'll Need
1 box of pasta - Penne or Rotini - 1lb
2 cans tuna in olive oil - I use Bumble Bee tuna that also has sundried tomatoes in it
1/2 cup chopped walnuts
1/2 to 3/4 cup olive oil
Fresh chopped herbs I use parsley, basil and thyme
Shredded parmesan cheese
Cook pasta 3 minutes shy of package directions
Just befor pasta is done:
In large pan, flake tuna and add walnuts
Add 1/2 cup of olive oil
Drain Pasta and add to tuna, stir well
Check to see if you need to add the rest of the olive oil
Chop up the fresh herbs and stir into pasta
Zest one lemon and squeeze the juice into the pasta, mix well
Serve and have a bowl of grated parmesan cheese for people to use
