lemon and coriander couscous

Ingredients

200g dry couscous
250mls boiling water
small bunch coriander leaves
1 lemon


1- soak the couscous for 10 minutes in boiling water in a pan with the lid on


2- zest the lemon and roughly chop the coriander leaves


3- fork through the couscous, add the zest and coriander and mix well


4- serve
