LEMON AND CORIANDER COUSCOUS

Ingredients

  • 200g dry couscous
  • 250mls boiling water
  • small bunch coriander leaves
  • 1 lemon

Directions

  • 1- soak the couscous for 10 minutes in boiling water in a pan with the lid on
  • 2- zest the lemon and roughly chop the coriander leaves
  • 3- fork through the couscous, add the zest and coriander and mix well
  • 4- serve

Notes

perfect with my turkey thigh tagine.
