LIME CORDIAL

INGREDIENTS
- Servings: 2 litres (70fl oz)
- finely grated zest and juice of 6 large limes
- finely grated zest and juice of 1 lemon
- 1 tablespoon citric acid
- 1.5kg (3lb 5oz) sugar
- 4 cups boiling water
DIRECTIONS
Combine lime zest, lemon zest, citric acid, sugar and water in a large bowl and mix well to dissolve sugar. Add lime juice and lemon juice and stir to combine. Leave to stand overnight or until mixture is cool. Strain mixture through a fine sieve
Pour into sterilised bottles and seal. The cordial can be used at once
