low-fat banana bread
2 egg whites
1/3 C sugar
1 C smashed very ripe bananas (about 3 medium)
1/3 C buttermilk
1 tbsp vegetable oil
1 tbsp vanilla extract
1 3/4 C all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Preheat oven to 325°F.
Lightly grease 8 1/2x4 1/2x2 1/2-inch pan; dust with flour.
Using electric mixer; beat all ingredients until just blended.
Transfer batter to prepared pan.
Bake bread until golden brown on top and tester inserted into center comes out clean, about 1 hour.
Turn bread out onto rack and cool.
