- 6 large mandarins
- juice of 2 lemons
Place whole mandarin and lemon juice in a saucepan and barely cover with water. Bring to the boil, reduce heat and simmer until mandarin are very tender. Remove mandarin from liquid, discard seed, then chop or puree. Return mandarin to saucepan.
Measure fruit and water mixture, then add an equal quantity of sugar. Place in a saucepan and bring to the boil, stirring to dissolve sugar. Boil for 20 minutes or until setting point is reached. Remove from heat and leave to cool for 10 minutes
Pour into sterilised jars and immediately. The jam can be used as soon as it is cool.
