MAPLE PECAN CUPCAKES

Ingredients

  • 6 oz sr flour
  • 6 oz caster sugar
  • 6 oz margarine
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 3 eggs
  • frosting-;
  • 1 pack unsalted butter
  • 1 pack icing sugar
  • milk
  • 1 tbsp maple syrup
  • pecan halves to decorate

Directions

  • 1- beat margarine until soft
  • 2- add all other cake ingredients and blend well
  • 3- spoon equal amounts into muffin cases in a baking tray
  • 4- bake for 15-20 minutes at 190c
  • 5- cool in tin for 5 minutes then on a wire rack until completely cold
  • to make frosting-
  • 1- beat softened butter until light and fluffy
  • 2- add sieved icing sugar and a little milk and beat well
  • 3- check consistency and add more milk if necessary
  • 4- add maple syrup and combine
  • 5- top each cake with a swirl of buttercream and a pecan half
