MAPLE PECAN CUPCAKES

INGREDIENTS

- 6 oz sr flour
- 6 oz caster sugar
- 6 oz margarine
- 1 tsp baking powder
- 1 tsp vanilla extract
- 3 eggs
- frosting-;
- 1 pack unsalted butter
- 1 pack icing sugar
- milk
- 1 tbsp maple syrup
- pecan halves to decorate
DIRECTIONS
1- beat margarine until soft
2- add all other cake ingredients and blend well
3- spoon equal amounts into muffin cases in a baking tray
4- bake for 15-20 minutes at 190c
5- cool in tin for 5 minutes then on a wire rack until completely cold
to make frosting-
1- beat softened butter until light and fluffy
2- add sieved icing sugar and a little milk and beat well
3- check consistency and add more milk if necessary
4- add maple syrup and combine
5- top each cake with a swirl of buttercream and a pecan half
