MEXICAN CASEROLE

Ingredients

  • 1 lb lean ground beef
  • 1 onion chopped
  • 1 tomato chopped
  • 1 can whole kernal corn drained
  • 1 can black beans drained
  • 1 package taco seasoning
  • 8 to 12 corn tortillas
  • 3/4 cup nonfat sour cream
  • 1 cup mexican blend cheese
  • sliced jalapeno peppers

Directions

  • Cook ground beef and onion and drain grease. Add corn, beans, tomatoes and taco seasoning. Mix well ans simmer for 5 minutes. Place half of the tortillas on bottom of a casserole dish. Layer meat mixture on tortillas. Layer
  • meat and tortillas til gone. Place in 350 degree oven and bake for 25 minutes. Remove from oven and sprinkle on shredded cheese and jalapenos then bake for 5 minutes. Top with sour cream and enjoy.
