500g (1lb 2oz) oranges
4 cups water
2 cups orange juice
1.5 kg (3lb 5oz) sugar
put fruit through a mincer or chop very finely. place in a large saucepan and add water and orange juice. bring to the boil and cook until fruit is soft. add sugar and bring to boil, stirring until sugar is dissolved. continue to boil hard for 25 minutes.
allow to stand for 10 minutes before pouring into warm sterilised jars. seal immediately. the marmalade can be eaten at once.
