Ingredients

1 cup boiling water
1/4 cup butter melted
1egg,lightly mixed
3/4 honey
1 cup brown sugar
4 cups white flour, all purpose
1/4 teaspoon salt
2 teaspoons cinnamon
1 1/2 teaspoon baking soda
1/2 cup chopped candied ginger
1/2 cup chopped walnuts
1/4 cup rum


Preheat oven to 350degrees. Pour boiling water over honey, sugar and butter. Cool. Add egg and mix well. In a large bowl sift flour, salt, cinnamon and baking soda. Add candied ginger and walnuts. Combine well. Pour wet ingredients into the dry ones and stir until moistened. Add rum and mix well. Pour into four small well buttered bread


tins and bake until a toothpick (or a piece of dry


spaghetti) comes out clean...about 45-55 minutes or so. My oven is kind of uneven so you may have to bake longer or shorter that that.


Unmold and let the breads cool on a rack

My sister turned me on to this recipe decades ago. I now make it every Christmas and give it to friends and family. It tastes very good sliced thin and toasted with butter. A little rasberry jam is very nice.
