2 cups couscous
2 tablespoons butter
2 cup water
1/2 cup grated parmasian cheese
2 tablespoons Extra virgin olive oil
1/4 cup sundried tomatoes roughly chopped
1/4 egg plant cubed
1/4 zuchini cubed
1 teaspoon oregano
1 teaspoon lemmon zest
Directions
Vegetables-
In sautee pan warm oil
first add sun dried tomatoes and zuchinni to pan because they need most time to cook
Add eggplant last with oregano cook for about 4 minutes stirring constantly
take off heat
Couscous-
Boil water
Pour couscous in water and cook for about 5 minutes
Place butter in pot and cover for 5 minutes
Fluff with fork and mix butter in while fluffing

combine couscouse vegetables and lemon zest in bowl till mixed fully
serve hot :)
