pesto chicken panini
1/4 cup pesto
1/4 cup mayonaise
1 tablespoon dijon mustard
One square - Focaccia bread
one chicken breast or two tenderloins
2 slices swiss cheese
2 slices tomato
half of roasted red peper
Combine pesto, mayo, and dijon mustard in a bowl and set aside.
Preheat panini grill to medium heat.
Cut chicken width way to make thiner then sautee on pan, or you can buy pre cook chicken.
Cut bread in half width way.
On out sides of bread with pastry brush apply light amount of olive oil.
On one half of the inside of bread place chicken, tomato, roasted red peper, swiss cheese, and as much sauce desired.
Place other half of bread oil side up on top.
Place panini on grill and put the top down for about 4-5 minutes of however long it takes to melt cheese and leeve brown slashes on outer sides of the bread.
Cut panini in half and serve hot.
