Ingredients

Bread flour 16 oz.
Pastry Flour 4 oz.
Salt ½ oz.
Butter, soft 4 oz.
Water, cold 10 oz.
Roll in
Butter 1 # 2 oz.
Bread flour as needed


Start with the water, and add the flours and salt in the mixing bowl. Add the soft butter. Mix with a hook until the mixture form smooth dough.


Shape the dough into a rectangle, cover and rest


in the refrigerator for approx 30


minutes to relax the gluten



add the butter once its cool 1/2 size of dough
