QUINOA WITH ROASTED GARLIC AND ONIONS

Ingredients

  • 1/2 c quinoa
  • 1 cup bottled water
  • 4 T roasted garlic
  • 1 can diced tomatoes, drained
  • 1 yellow onion -diced and caramelized
  • 1/2 c grated parmesan reggiano
  • 1/2 t ground grains of paradise

Directions

  • rinse quinoa under cold running water until water is clear
  • In a saucepan, combine quinoa and water, simmer for about 15 minutes or until quinoa is softened. Remove from heat and drain
  • Combine roasted garlic, diced tomatoes, and caramelized onion, simmering for about 10 minutes with quinoa
  • Remove from heat, and add cheese and grains of paradise, mixing well

Notes

I wanted to make a simple dish with quinoa that had all my favorite flavors in it, and that I could enjoy hot or cold. This stuff is great for you - full of vitamins and protein
