RASPBERRY & ORANGE TIRAMISU

Ingredients

  • 250g mascarpone
  • 3 tbsp caster sugar
  • 3 tbsp framboise (raspberry shot)
  • 1 egg yolk
  • 1 egg white
  • 1 cup orange juice
  • zest of an orange
  • 200g raspberries
  • sponge finger biscuits

Directions

  • 1- mix mascarpone, sugar, framboise, egg yolk until smooth
  • 2- dip sponge fingers in orange juice and line the bases of the dishes
  • 3- whisk egg white to form soft peaks then fold through mascarpone mixture
  • 4- spoon into dishes on top of biscuits
  • 5- top with a handful of raspberries and a sprinkle of orange zest
  • 6- chill until required
