RASPBERRY & ORANGE TIRAMISU
raspberry & orange tiramisu
a fruity version for summer x

- 250g mascarpone
- 3 tbsp caster sugar
- 3 tbsp framboise (raspberry shot)
- 1 egg yolk
- 1 egg white
- 1 cup orange juice
- zest of an orange
- 200g raspberries
- sponge finger biscuits
DIRECTIONS
1- mix mascarpone, sugar, framboise, egg yolk until smooth
2- dip sponge fingers in orange juice and line the bases of the dishes
3- whisk egg white to form soft peaks then fold through mascarpone mixture
4- spoon into dishes on top of biscuits
5- top with a handful of raspberries and a sprinkle of orange zest
6- chill until required
