remix rotisserie with pineapple

Serves 6 | Prep Time 10 | Cook Time 10


whole rotisserie chicken cut into sections
4 oz canned or fresh pineapple chunks
1 tbspn worcestershire sauce
3 tbsp diced red onion
2 tbsp minced garlic
1/4 cup chicken stock
2 tbsp teriyaki sauce
2 tbsp of honey
1 tbspn brown sugar
seasoning blend of hawaiin spices, garlic, onion, and cayenne powder
1/2 cup melted butter

preheat oven to 325

whisk chicken stock, honey, worcestershire, and teriyaki with spices

add butter in pan with garlic onions stirring frequently on low heat

place chicken in oven safe dish then cover with sauce

then pour on onion and garlic blend

use toothpicks to attach pineapple chunks on chicken pieces

then sprinkle with brown sugar

heat for 8-10 minutes

serve with rice or rolls with remaining drippings from chicken

We all have had those days where there is just no time to plan to cook dinner. Rotisserie chickens are super convenient but there are limits when it comes to selecting various flavors. This recipe will enhance the flavors of the traditional grocery store bought bird by giving it a sweet pineapple glaze. Serve with rice and /or sweet rolls and it becomes a winner ;).
