ROASTED BALSAMIC CHERRY TOMATOES

 

  • Cooking Time: 20-30
  • Servings: 4-6
  • Preparation Time: 2

Ingredients

  • 2 punnets ripe cherry tomatoes
  • generous glug olive oil
  • generous splash good balsamic vinegar
  • lrg pinch salt
  • lrg pinch sugar
  • handful fresh basil leaves

Directions

  • 1- place tomatoes in a roasting tin and pour over the other ingredients
  • 2- pre-heat oven to 190c
  • 3- roast for 20-30 minutes until tomatoes have burst and are soft

Notes

absolutely delicious with meat, poultry or fish in summer- this dish rocks!!
