Pastry flour 13 oz.
Salt 1 tsp.
Baking powder ½ oz.
Sugar 1 ½ oz.
Butter 6 oz.
Eggs ½ ea.
Egg yolks 1 ea.
Heavy cream 7 ½ oz.
Mix together all dry ingredients.
Cut the butter into the dry ingredients until it is
in 1/2” pieces.
Combine the eggs, yolks, and heavy cream.
Add the liquids to the butter and dry ingredients and mix just until a dough forms.
Roll to approximately 1” thick.
Cut the dough into the desired shape, egg wash.
Refrigerate for 10 to 15 minutes
Bake in oven at 375°F
