sweet and sour chicken bites
2 skinless boneless chicken breasts - cut into strips about 1"x3" each.
1 small knob ginger - grated
2 cloves minced garlic
1/4 t salt
1/4 t pepper
2 eggs beaten
cornstarch - about 1/2 cup
about 3 cups canola oil
sweet & sour sauce
1/2 c vinegar
1/2 c water or pineapple juice
1/4 c soy sauce
1 c sugar
1/4 c catsup
marinate chicken in garlic, ginger, salt, pepper in ziploc bag - up to overnight
pour beaten egg over chicken
roll chicken in cornstarch (heavily dredge)
Deep fry in 350 degree canola oil in batches
prepare sweet and sour sauce by just mixing it all together
place chicken in 8x8 baking dish and pour sweet and sour sauce over it.
Bake for 20 minutes at 350 degrees, turn chicken, and bake for another 20 minutes
