Serves 7 litres (245fl oz) | Prep Time | Cook Time

Ingredients

6kg (13lb 8oz) tomatoes, roughly chopped
1kg (2lb 4oz) onions, roughly chopped
750g (1lb 10oz) sugar
2 cups white vinegar
120g (4 1/4oz) cooking salt
1 1/2 tablespoons whole cloves
1 1/2 tablespoons allspice berries
1/2 teaspoon cayenne pepper


Place all ingredients in a large saucepan. Bring to the boil and cook, stirring regularly, for 4 hours. Strain mixture through a sieve and return to the to clean saucepan. Bring to the boil and cook for 5 minutes


Pour into warm sterilised bottles and seal immediately. Invert bottles briefly. Consume at once or store in a cool, dry and dark place for up to 2 years.
