TURKEY THIGH TAGINE

Ingredients

  • 2tbsp olive oil
  • 1 chopped onion
  • 500g diced turkey thigh
  • 125g soft pitted dates
  • 250mls fresh orang juice
  • 250mls water
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cumin
  • 1/2 tsp ground allspice
  • pinch salt
  • 50g ground almonds
  • handful flaked almonds

Directions

  • 1- soften the onion gently in the olive oil for about 10 minutes
  • 2- add all the ground spices and turn well with the onions
  • 3- add the meat to the pan, searing evenly on all sides
  • 4- add the dates, orange juice, water and salt, bring to the bubble
  • 5- cover and simmer on the lowest possible heat for 2 hours
  • 6- just before serving, add both ground and flaked almonds
  • 7- serve with couscous

Notes

not at all spicy but packed with flavour. a must try!
